It always astounds me how utterly chaotic this last month of the year becomes, it’s as though the calendar senses its demise and goes all out in protest. Maybe though it isn’t the calendar conspiring, perhaps instead it’s we who subconsciously invite the pandemonium in as we attempt to resurrect the year; glorify the year; properly end the year. I wonder why it is we have such a reverence for thresholds in time. Anyhow once the silly season is upon me I am ever in pursuit of that elusive gracefulness that comes with the art of gathering. Time is a finite resource during festivities and so meal time in my opinion should have a measure of ease. I love basic preparations that are effortless with an air of fancy about them and this plate is just that. It's perfect for entertaining with ease and is a cinch to construct. The foundation is a moorish cashew & miso hummus topped with all manner of fresh produce and if you take a moment to linger over it's composure I guarantee it will be a marvel. 

Cashew & Miso Hummus w/ Market Bounty

60g cashew nuts

450g chickpeas, cooked

60g tahini

60g white miso

1/2 tsp chilli flakes

2 tbsp rice wine vinegar

1 tbsp honey

2 tbsp extra virgin olive oil

1/4 cup of ice water

salt & pepper

Begin by blending all of the above ingredients in a high spend blender until the hummus is smooth and creamy. 

Spread the hummus upon a large serving plate and top with any manner of produce. My rendition included;

Heirloom cherry tomatoes, halved

Cucumber, sliced

Watermelon radish, sliced

Corn kernels

Cherries, pitted and halved




Amaranth leaves

Borage flowers

Salt & pepper

Serve immediately with seeded bread.


The beauty of this dish is that seasons are of no consequence. Simply select produce that is available and at its best. 



Any manner of cheese; comte, gouda, emmental, roasted nuts & seeds, pickled vegetables, cornichons, seeded crackers, rye bread, oat cakes.



Summertime, cucumber & strawberry / fresh chèvre / pistachio / sprouts

Springtime, asparagus & green beans / toasted sesame seeds / shaved parmesan / white peach / pea shoots

Wintertime, roasted pumpkin & cauliflower / hazelnut dukkah / persimmon / mixed leaves

Fall, roasted beets & grapes / smoked almonds / figs / mixed leaves
